Founder Bill Lark was a pioneer of Tasmanian whisky, starting the distillery back in 1992, and Classic Cask is still based on his original recipe. It's double distilled from Tasmanian barley and matured in small first fill sherry and port casks. This is a fantastic example of a well rounded and balanced whisky, and it shows just how far Australian whisky has come. We loved the subtle sherry influence, which sits in perfect balance with the malt and really seals the deal on a distinguished expression. It's not bold, but it is confident and complex in its own way. We honestly struggled to score this one. On some dimensions it's a great drop, but personally we like a little more character driving the flavour, and we were looking for just a little more to lift it into the outstanding section, the way Lark's Chinotto Citrus Cask does. At around $200 for a 500ml bottle, it isn't one of our top value picks either. It took Gold at the San Francisco World Spirits Competition in 2025, and we can see why.

Official website(opens in a new tab)A fancy dinner party with friends who appreciate good whisky. Pour it alongside roast duck or honey glazed ham, or bring it out with the cheese board, with aged gouda, manchego, dried fruits and nuts. It's just as good at the end of the night with Christmas cake, a rich fruity dessert or a few squares of dark chocolate, which makes it a natural for the festive season too.
If you're trying to impress a whisky connoisseur, look no further. This one won't disappoint. It's also a great pick if you love a well balanced sherry and port cask malt and want to see what Tasmania can do. Newer drinkers will probably enjoy it too, but at this price it's one to save until you've had a few more under your belt and can really appreciate what it does.
