We were expecting something truly special, however felt a little let down by the lack of sweetness to accompany the intense savoury flavours that dominate the palate. The nose is promising, with subtle smoke, chocolatey leather and a touch of medicinal iodine over some fruit and cereal. The palate brings dried fruits, black pepper and lime, with a little vanilla caramel from the bourbon casks, but not enough to balance the savoury side. The finish starts with a minerally malt before moving into warm tobacco and earthy leather. Leather and iodine are great, but they didn't harmonise in the finish and left us feeling unsure if this was the right whisky for us. Plenty of promise, but it did not quite deliver.

Official website(opens in a new tab)This would make a great gift for a whisky connoisseur who enjoys their Islay flavours but is looking for an Australian twist. Its savoury, earthy style also makes it a good winter warmer alongside a grilled steak, venison or smoked fish.
If you are looking for an alternative to sweet, fruit driven whiskies but don't want to go all the way to Islay smoke and iodine, then this is a great middle ground. Savoury in flavour, it sits right in between and is sure to please a whisky connoisseur. It's also a good step up from the Bakery Hill Classic Malt if you want something with more weight.
